Keto Bacon Wrapped Jalapeno Poppers

Full of flavor and wrapped in bacon, it doesn't get much better does it? This tasty appetizer can be assembled ahead of time and stored in the fridge and popped into the oven to bake later the same day!

Ingredients

  • 6 Jalapeno peppers, halved, seeded
  • 12 sliced regular cut bacon
  • FILLING:
  • 4 oz cream cheese, softened
  • 1 oz cheddar cheese, grated
  • 2 TBSP red onion, minced
  • 2 cloves garlic, minced
  • 1 TBSP Parmesan cheese, grated
  • 1 TBSP fresh basil, chopped
  • 1 TBSP fresh chives, chopped
  • 1 TBSP fresh parsley, chopped
  • 1/2 TBSP fresh oregano
  • 1//2 tsp sea salt
  • 1/4 tsp pepper
  • 1/4 tsp chilli pepper flakes (optional)

Instructions

  1. Place oven rack in the center of your oven and preheat to 400F.
  2. Line a baking sheet with foil or parchment for easy cleanup, set aside.
  3. In a medium-sized mixing bowl, cream the filling ingredients together until well blended.
  4. Divide the filling ingredients amongst the peppers filling the cavities level or just slightly higher - too full and it will just run out. If you have leftover filling you can use it to stuff a few mushrooms or use it for filling in an omelet - you're welcome!
  5. Using a full slice of bacon to wrap each pepper half fully in bacon, tucking the ends under the pepper. If you have a bacon tail ending up on the top, secure it with a toothpick (you'll remove toothpicks after cooking, prior to serving).
  6. Bake in the oven for approximately 30-35 minutes until bacon is cooked to the desired level of crispness. You can use the broiler at the end if desired, but watch carefully!
  7. Serve immediately! Enjoy!
