Butter and keto go hand-in-hand! So what could be better? Fresh Garlic and Chive Butter of course! This is one of my favorite things and I use it in so many places. I’ve never had an actual recipe for it but telling you to add a little of this and a little of that doesn’t really help you. So I’ve taken the time to measure everything for you (your welcome!). With that said, this recipe is very forgiving, so if you add a little more or a little less, it’s no big deal.

Today, I happen to have garlic scapes fresh in the garden so I am using that in place of actual freshly minced garlic. Either works, use what you have. I always have fresh chives and parsley – yes, even in the winter! Did you know you can buy that bunch of parsley in the grocery store, cut your ends like you do fresh flower and place in a jar of water (I change the water every other day) and you’ll be able to keep it on the counter for over a week! Fresh parsley makes everything prettier and adds in extra nutrients.

Okay back to the Garlic and Chive Butter – this is also called a “compound butter”. You can really make a lot of different flavors with fresh or dried herbs. Check out Pinterest for other ideas! We use our butter to make Keto Garlic Sticks (our garlic bread replacement), a nice pat onto a grilled steak, onto steam veggies, scrambled egss (oh my!). Savory Fresh Garlic and Chive Butter adds a burst of flavors to grilled meats, steamed veggies and livens up scrambled eggs!

Ingredients

  • 250g (1 cup) grass-fed butter, softened
  • 1 1/2 TBSP fresh garlic, minced (you can use garlic scapes too!)
  • 1 TBSP fresh parsley, chopped
  • 2 TBSP fresh chives, chopped
  • 1/2 tsp black pepper

Instructions

  1. Mix everything together and let sit on the counter for a hour to allow the flavors to come together.
  2. You can store in the fridge for a week or portion and freeze.
